LENSES AND CREAMY QUINOA

INGREDIENTS
 

For 4 people

  • 1 tblsp of olive oil
  • 1 onion
  • 2 chopped cloves of garlic
  • 1 tblsp of powder curry
  • 2 tsp of turmeric
  • 1 tsp of ground(worn-out) cumin
  • 200g of green lentils
  • 200g of quinoa, rinsed
  • 1l of vegetable broth
  • 400g of spinach
  • 20cl of coconut milk
  • 2 tblsp of green lemon juice
  • 50g of crushed cashew nuts
  • 2 tblsp fresh(cool) coriander

 

INSTRUCTIONS
 

  1. Warm the oil in a big pan over medium heat.
     
  2. Add the onion and cook, during approximately 5 minutes. Add the garlic and cook, during 2 minutes. Add a little salt, the curry, the turmeric, the cumin, the lenses, then incorporate the broth. Bring to a boil over a brisk heat, then lower(dim) the fire(light), cover and let simmer(plot) during 25 minutes. 10 minutes before the end, add the quinoa. If the curry is very thick, you can add a little water.
     
  3. Add spinach and coconut milk, cover and cook 5 minutes.
     
  4. Rectify the seasoning.
     
  5. End with the green lemon juice, cashew nuts and coriander.
